Dear Reader,

Hello! And welcome again to the sticky-sweet world of ‘way too many Cavities’.

In this, our fourth issue, we take a little detour away from our strictly ‘professional’ and cutting-edge technique-driven outlook to modern pastry and go instead, back to basics. Where in other issues we have invited 4-5 chefs to do incredibly deep dives into one specific dessert, here, in what I am calling my -

‘Class of Cookie’

I invite 22 contributors from across the food industry to each contribute their go-to favorite cookie.

These contributors - they are pastry chefs, yes. But they are also journalists, they are also cuisiniers and restaurateurs. They are entrepreneurs, and they are artists. They are us, yes, but they are also you - because the joys of pastry (or in this case, cookies) are for everyone.

With this, I invite you to rediscover within yourself the latent gift of cavities - for the Class of Cookie is now in session.

ABOUT CAVITIES

Cavities is an Annual publication that aims to celebrate the best of modern pastry in India.

By getting some of the most talented pastry chefs to share insights, know-how, and recipes centered around the theme of each issue, Cavities attempts to seed a community for pastry chefs in the country. These newly opened channels of communication, we hope, will foster easier exchange of ideas and push the industry forward as it grows to be a globally competitive center for talent in modern patisserie.

A digital copy of Cavities is available to the larger professional community, and casual pastry enthusiasts alike - to download for free through the Ether Atelier website, and the money from the sale of all print copies is fed back into sustaining the project for another year.
